MEATLOAF ZINGERS 

1 lb. ground beef/turkey
1/2 cup BBQ sauce
1/2 cup dried onions
1/2 cup Italian bread crumbs
1 egg
2 large dill pickles cut into quarters long ways
8 strips cheddar cheese thinly sliced 

Combine dried onions, bread crumbs, egg, ground beef and 1/4 cup BBQ sauce. Flatten into 8 patties and place slice of pickle in center and wrap meat around it, making a small loaf shape. 

Bake at 350 degrees for 30 minutes, drain fat. Spread remaining BBQ sauce over meatloafs and top with cheese. Bake for 2 more minutes.

Serves 6-8

Healthy Tip: Use fat free shredded cheddar.
