1 cup cooked, deboned chicken 1 large egg 1 cup shredded cheddar cheese 1 cup shredded mozzarella cheese 12 to 16 oz. ricotta cheese 10 oz spaghetti sauce 3 cups broccoli flourettes 1/2 cup bell pepper, chopped 1/2 cup onion, chopped 12 lasagna noodles In bowl, stir together ricotta cheese and egg. In saucepan brown onion and bell pepper. Add spaghetti sauce broccoli and chicken, remove from heat. In 9x13" pan sprayed with non-stick cooking spray, spread approx. 1/2 cup spaghetti sauce mixture. Lay 3 noodles. Top with 1/3 of ricotta cheese mixture, 1/2 cup spaghetti sauce mixture, and 1/4 each cheddar and mozzarella cheeses. Lay 3 more lasagna noodles, repeat process until last layer of lasagna noodles. Top with remaining sauce and cheese. Bake covered at 350 degrees for 30 minutes. Serves 6 to 8. |
