RED BEANS AND SAUSAGE

5 cans New Orleans Style red beans
2 lbs. smoked sausage, cut into inch size pieces
1 onion, chopped
1 bell pepper, chopped
4 cups cooked brown rice
2 tbsp. black pepper
2 tsp. cajun seasoning

Mix all ingredients except for brown rice in a large stock pot.  Stir till heated thoroughly.  Simmer for 30 minutes with lid on.  Serve over brown rice.  Cornbread on the side makes a nice addition to this quick and simple meal.  Tastes even better as leftovers.

Serves 6 to 8.
