Medium head of cabbage
1 lb. smoked sausage
4 to 6 carrots
1/4 cup butter
2 tbsp. black pepper
2 tsp. Cajun seasoning 

Cut cabbage in large chunks. Cut sausage into 1" pieces and slice long ways. Cut carrots the same way. Put all ingredients in a large pot. Cook covered over medium heat for 20 minutes. Add seasoning, stir well. Simmer for 10 more minutes. 

Serves 4-6

Healthy Tip: Use reduced fat butter, turkey sausage and reduced fat butter.
