SAUSAGE AND CABBAGE

2 medium head of cabbage
1 lb. smoked sausage
4 to 6 carrots
1/4 cup butter
2 tbsp. black pepper
2 tsp. cajun seasoning

Cut cabbage in large chunks. Cut sausage into 1 inch pieces and slice long ways. Cut carrots the same way. Put all in large put with butter. Cook covered over medium heat for 20 minutes. Add seasoning, stir well. Simmer for 10 more minutes. Let sit for 5-10 minutes.

Serves 6 to 8.
