3 cups cooked rice, cooled
1-1/2 cups chopped cooked turkey
1-1/2 cups milk
3 medium to large eggs
1 cup cheddar cheese
1/2 cup mozzarella cheese
1 onion, chopped
1 bell pepper, chopped
1/2 cup picante' sauce
1 tsp. basil
1/8 tsp. cayenne pepper 

Combine rice, turkey, picante', onions, bell pepper, basil, cayenne pepper, milk and eggs in 13x9" pan coated with non-stick cooking spray. Top with cheeses. 

Bake at 375 degrees for 20 minutes or until knife inserted near center comes out clean.

Serves 6-8

Shortcut: Use pre-cooked turkey chunk.

Healthy Tip: Use brown rice, 1% or skim milk, egg whites only, reduced fat or fat free cheeses.
