3 cups cooked rice, cooled to room
temperature 1-1/2 cups chopped cooked turkey (buy it already cooked in chunks to save time) 1-1/2 milk 3 medium to large eggs 1/2 to 1 cup cheddar cheese 1/2 to 1 cup mozzarella cheese 1 onion 1 bell pepper 1/2 cup picante' sauce 1 tsp. basil 1/8 tsp. cayenne pepper Combine rice, turkey, picante', onions, bell pepper, basil, cayenne pepper, milk and eggs in 13x9" pan coated with non-stick cooking spray. Top with cheeses. Bake at 375 degrees. for 20 minutes or until knife inserted near center comes out clean. Serves 8. |
