1 can artichoke hearts, drained 1 green bell peppers, chopped 1 sweet onion, chopped 1 cup mozzarella cheese, shredded 1 cup mild cheddar cheese, shredded 1 Boboli pizza crust or canned biscuits to make individuals 1 cup Alfredo Sauce (or home made mixture - see below for recipe) pepper, Cajun seasoning, garlic powder On pizza crust evenly spread Alfredo sauce. Next add quartered artichoke hearts to cover almost entire crust. Add onions and bell pepper, sprinkle pepper on top. Cover with cheddar then mozzarella cheese. Sprinkle more pepper on top. Bake at 425 for 10 minutes then broil for 4 minutes or until cheese is brown. ----------------------- Easy Alfredo Sauce 3 cups of milk On LOW HEAT warm 3 cups of milk, one cup evaporated milk, and 1/2 butter. Stir constantly so milk and cream do not curdle. As mixture warms up, remove 1/4 cup from pot then mix that with 2 to 3 tablespoons flour. If mixture is too thick, add more liquid. When all lumps are removed, slowly add flour and milk mixture. Stir constantly during this process. Add a dash of salt, pepper, Cajun seasoning and Oregano to taste. Raise heat to medium and cook sauce until it thickens. A wisk would work better at this point to stir to keep the consistency of the sauce even. When thickened to you liking... enjoy! Serves 4-6. |
