ZUCCHINI LASAGNA 

1 lb. ground beef/turkey
5 large zucchini
1 16 oz. container ricotta cheese
16 oz. shredded cheddar cheese
16 oz. spaghetti sauce
1 can tomato soup
1/2 cup bell pepper, chopped
1/2 cup onion, chopped
2 eggs



Preheat oven to 375 degrees. Brown ground beef/turkey with chopped bell peppers and onions. and drain. Cut zucchini in strips length-wise. In bowl, mix together eggs, ricotta cheese and 3/4 of the shredded cheddar cheese. In another bowl combine spaghetti sauce and meat. In a rectangle pan pour a layer of meat sauce. Then layer zucchini strips, meat sauce, cheese mixture, then repeat twice, ending with zucchini strips. Spread tomato soup on top and sprinkle with remaining cheddar cheese. 

Bake uncovered for 55 minutes.

Serves 6-8

Healthy Tip: Omit ground beef/turkey and use reduced fat spaghetti sauce or omit and add 16oz. tomato soup.
